Red Red Wine… Brownies Options

As I do have some allergies I’m trying to dabble a little more in the world of baking .. One of the biggest things in a lot of baking recipes …. Is Eggs which I’m allergic to ( Yay Me) So baking to avoid my allergies seems to be a solid switch off so I can still have my faves ! I am not Vegan or even Vegetarian but I do like not having an upset stomach and eating more plant based so I crossed over the recipe for your dietary convenience ..

So Here are Dark Chocolate Red Wine Brownies with a vegan/vegetarian  substitute if you were wanting to make them that way. There is no strong boozy taste the Red wine simply compliments the brownies and gives them another complex level of flavours to enjoy .. and you won’t be wanting to share these

Red Wine Brownies

6 ounces dark chocolate, roughly chopped ( use up some of those Truffles your Hording from Purdy’s) or Vegan Chocolate ( vegansupply.ca) ( I like Zimt)

1/2 cup unsalted butter or coconut oil

1 cup granulated sugar / 1 cup Erythritol ( for a low Cal/ sugar free option )

2 large eggs  / chia seed eggs/ any egg free substitute you prefer

1/4 cup red wine ( port/merlot/cab sab/malbec)

1 cup all-purpose flour / 1 cup Gluten free Flour

1/2 teaspoon salt

Instructions

Preheat oven to 350°. Grease an 8-inch square baking pan.

Place “chocolate and butter” in a double boiler ( microwave works in 20-30 sec increments )until butter has melted and chocolate melts when stirred. Stir until smooth. Set aside to cool slightly.

Mix “sugar and eggs” in a large mixing bowl until thoroughly combined. Add cooled chocolate mixture and red wine, and mix well.

Add flour and salt, and mix just until silky smooth and combined

At this point if you wanted to add chocolate chunks, nuts  or berries (raspberries/cherries) go for it

Transfer batter to prepared pan and spread evenly.

Bake 35 to 40 minutes, or until a tooth pick inserted into the center comes out with moist crumbs.

Cool in pan 10 minutes before cutting into bars.

Best served with a glass of wine, Ice cream, coffee, or just eat the whole thing with your hands !!

Yield: 16 2-inch brownies
