What did I say .. Protein ?  yeah !! Removing  the noodles and need for all that extra cheese noodles or zucchini  mush .. I bring you Chicken Deli Meat !

This was a brilliant Idea I saw  looking at recipes at on the web and came across this  one , , Made it and it was fantastic but I  needed to put my own spin on it .. add some spinach, different meats and made it nicely low carb , but easily Keto if you  make sure you are using organic sugar free items  ( sauce & chicken) .. This made 12 healthy servings that made me full  . Now I’m sure you want to know .. how did the chicken do … FANTASTIC !  I couldn’t tell the difference from  real noodles , the chicken takes on the taste of the meat sauce like ordinary noodles do …  This is perfect for those cool nights or make a head and freeze portions for quick easy dinners !

Protein Noodle Lasagna

  • 750 grams  90% Ground Beef
  • 2 clove, Garlic, raw
  • 1 large, Egg
  • 1/2 teaspoon, Salt
  • 0.75 lb(s), Mozzarella Cheese
  • ¾  cup, Cheese – Parmesan, shredded
  • 1 container (650 mls ea.), Tomato Basil Pasta Sauce  ( or swap for favorite sauce)
  • 12 slices 50g, Smoked Chicken Breast
  • 600 gr , Ricotta
  • 750 grams Pork, fresh, ground, cooked
  • 1 container (300 grams ea.), Frozen Chopped Spinach


Preheat oven to 425 degrees.

In a frying pan , cook pork, ground beef, onion, and garlic over medium heat until well browned. Stir in pasta  sauce of choice. ( if you add any extra spices please factor them in to your final tally)

In a mixing bowl, combine ricotta cheese with egg , spinach, and 1/2 tsp salt.

To assemble, spread 1/2 of meat sauce in the bottom of a 9×13 inch baking dish.

Arrange chicken breast slices over meat sauce. ( 6 slices should cover a layer)

Spread with one half of the ricotta cheese mixture.

Top with a third of mozzarella cheese slices.

Spoon the other 1/2 of the  meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese.

Repeat layers, and top with remaining mozzarella and Parmesan cheese.

Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.

Bake for 25 minutes. Remove foil, and bake an additional 25 minutes, you are looking for  golden bubbly cheese
