Peanut Butter Cream Cheese Brownies …. with Avocado?

So I have started another cycle of the keto journey and I convinced the Boyfriend to give it a go and he was craving something sweet so I found a couple recipes and kinda mashed them together to make something low carb yet still tasty and satisfying

Ingredients

Yields: 14

4 large eggs

2 ripe avocados (medium sized)

1/2 c. (1 stick) butter, melted

10 tbsp. unsweetened peanut butter

2 tsp. baking soda

2/3 c. stevia

2/3 c. Unsweetened cocoa powder

2 tsp. pure vanilla extract

1 tsp. kosher salt

2 oz cream cheese

flaky sea salt (optional)

  1. Preheat oven to 350° and line a 8”-x-8” square pan with parchment paper. In a blender or food processor, combine all ingredients except 4 tbsp peanut butter and flaky sea salt and blend until smooth.
  2. Transfer batter to prepared baking pan and smooth top with a spatula. Top with flaky sea salt, if using. Heat up 4 tbsp  peanut butter and cream cheese and drop  it on the mixture then swirl it in
  3. Bake until brownies are soft but not at all wet to the touch, 25 to 30 minutes. Let cool 25 to 30 minutes before slicing and serving.
  4. Serve with whipped cream and chocolate sauce

 

If you are feeling fancy you can add some sugar free chocolate chips , chop up an 85% dark chocolate bar  or lilys/cocopolo bars  and mix it in the batter
