LOW CARB ASIAN CHICKEN SALAD

I’m a huge fan of Asian flavors and a good salad makes me happy .. I saw a bunch of different paleo and super clean recipes floating around but none that were keto and low carb .. so I did a little tweaking and I think I finally came up with a good ginger sesame flavored dressing that is Low Carb

Salad ingredients:

1 bag coleslaw
1 1/2 cups snow peas, trimmed
1/2 cup cilantro, chopped
3 green onions, sliced
2-3 cooked chicken breasts, shredded ( 1 per person)
2 tablespoon sliced almonds
2 tablespoons black sesame seeds
2 tablespoons sesame seeds

Dressing ingredients:

1/4 cup coconut amino/tamari/soy sauce
3 tablespoon garlic, minced
1 tablespoon ginger, minced / ginger powder works fine too
3 tablespoon toasted sesame oil
2 tablespoon light olive oil
Sugar free sweetener , I used 1 squirt of liquid sweetener
1/4 teaspoon ground red pepper
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon rice wine vinager

INSTRUCTIONS
Combine all the salad ingredients into a large bowl.
Blend dressing ingredients until well incorporated.
Pour over salad ingredients.
If you like a lightly dressed salad, don’t add all the of the dressing to your salad.
Serve immediately.

Tips : toast the almonds and sesame seeds for extra flavor, add the dressing per serving, its a big salad so perfect for lunches
