Instant Pot Whole 30 Italian Meatballs

Another great Recipe if you like yummy left overs .. These are fresh and easy and reheat well made a great dinner for a couple nights make and serve in a half an hour easily serving 4 people .. I like to use zoodles and just cook them in the sauce .. So Yummy will make again

 

Ingredients

  • 1.5 lbs ground beef leaner the better
  • 2 Tbsp fresh cilantro, chopped
  • ½ cup almond flour
  • 2 eggs/ Chia Eggs
  • 1 tsp kosher salt
  • ¼ tsp ground black pepper
  • ¼ tsp garlic powder / chopped garlic , your preference
  • 1 tsp dried onion flakes
  • ¼ tsp dried oregano
  • ⅓ cup warm water
  • 1 tsp olive oil
  • 3 cups sugar free marinara sauce
  1. Combine meatball ingredients in a medium bowl and mix thoroughly by hand.
  2. Form into approximately two inch meatballs.
  3. Coat the bottom of the Instant Pot insert with the olive oil.
  4. If you wish to brown them, turn on the saute function and brown on both sides , be gentle you don’t want these to break
  5. Layer the browned or raw meatballs in the Instant Pot, leaving ½ inch of space between them. Don’t press down.
  6. Pour the marinara sauce evenly over the meatballs.
  7. Set the Instant Pot to Manual.
  8. Select low pressure.
  9. Set the cook time to 10 minutes.
  10. Once the timer goes off turn the valve to vent and allow the steam to dissipate completely.
  11. Remove the lid and serve the meatballs with sauce over zoodles or spaghetti squash if desired
