So I have almost survived this whole month of the Whole 30 and while Making dinners I’ve had to follow the rules but also keep it tasty .. While recipe hunting for dinner this gem was found .. Let’s just say I doubled it and used it for the whole week on everything .. it was that damn good .. I give you
1 small/medium cucumber or ½ large cucumber, cut in half and seeds scraped out with a spoon ( I left the seeds in )
2 cloves garlic
1 tablespoon red onion, diced
juice of 1 lemon
1 tablespoon fresh dill (or mint, depending on your preference)
sea salt and pepper, to taste
Threw all of this into my Nutra Bullet and let it become nice an creamy .. It was the perfect sauce to add to Kabobs and Lemony Potatoes
Delicious Lemon Potatoes:
These were a huge hit on Greek night and complimented the Avocado Tzatziki nicely.. I love lemons so really you can never have enough
So here is what we used
4 medium Potatoes .. you can peel them if you want but I liked them a little more rustic ( I used red)
Juice of 1 lemon ( I used about 4 tablespoons of lemon juice )
4 tbsp. olive oil
3 chopped garlic cloves , the more the merrier really
Pinch dried oregano Coarse salt and freshly cracked black pepper, to taste
Preheat oven to 350 degrees F.
In a large zip lock bag, add potatoes, lemon juice, olive oil, , oregano, garlic, and salt and pepper. Toss to coat potatoes. Let potatoes sit in the fridge for 30 min .. flipping them in the bag
Transfer potatoes roasting pan covered in foil, drizzle the lemon marinade liquid over them . Roast potatoes until tender, give them a flip about 20 min in and apply more lemon marinade liquid , about 30 to 40 minutes the should be soft and starting to brown , Turn on the Broiler for 5-10 min till they get crispy . Serve with anything you want !
