When you start to eat the Low Carb way you’re going to start to miss all those starchy delicious comfort carbs you have been so used to working with for forever… Well do I have a saving grace for you…? Cauliflower!! It is so versatile and yummy!
First up Cauliflower Rice… a staple in a lot of foods here’s a cheat
First ~ Wash and thoroughly dry cauliflower, then remove all greens and cut into 4 even sections
Second ~ with a box grater, use the medium-sized holes to grate the cauliflower into the size of rice, leaving any large, tough stems behind.
Third ~ Transfer to a clean towel or paper towel and press to remove any excess moisture, which can make your dish soggy.
This will store for a little while in your fridge… you can also freeze this on a pan then put it in a bag for future use!
So now that you have the Cauliflower Basics down … what else can you do with it?
Well how about Cauliflower Buffalo Bites?
1 ~ You can first create a batter with parmesan Cheese, Pork Rinds, spices ( garlic, onion,cumin,cayenne) and a little Almond flour ¾ cup in total for all ( play around with the amounts it will be different for everyone) , add in ½ cup of unsweeted almond milk and add water to thin it down depending how much batter you want
2 ~Cut up 1 head of Cauliflower in to pieces
3~ Add Pieces into your batter and place on a baking sheet
4~Cook for 20-25 min in a 450 degree oven
5~Mix together 1 table spoon of butter with about ¾ cup of your favorite hot sauce
6~ Take your bites out of the oven place in a bowl and pour all the sauce on top mixing them well to coat them
Serve with your favorite full fat ranch dressing or whatever you enjoy dipping them in!
Cauliflower Pizza Crust …
2 cups of the Cauliflower Rice
2 cups Mozzarella Shredded
Season with your favorite spices
Preheat the oven to 425 degrees
Combine crust ingredients in a bowl.
Press into a circle on a greased 12″ pizza pan by sprinkling the crust mixture around the pan and then gently pressing the mounds together. (Prevents thick spots in the center)
Bake for 12-15 minutes, or until the edges are a golden-brown color.
Allow to cool for five minutes.
Gently slide a metal spatula around the edges to loosen from the pan slightly
Add your favorite toppings and broil till the cheese is bubbly and golden
To make Cauliflower Bread Sticks just add the cheese on top and broil as instructed, cut in to strips and serve with your favorite dip
For your Pasta, Pizza, or anything you want really
8 large cloves garlic, minced (I always add more … who doesn’t)
2 tablespoons butter
1 head of cauliflower in pieces
6 cups vegetable broth or water
1 teaspoon salt
½ teaspoon pepper
½ cup almond milk
Sauté the Garlic & Butter over low heat till it is warmed and smells delightful, be careful to not brown this as it will give off a bitter taste, remove from the heat and place aside
Boil the Cauliflower in the broth/water till it is tender (about 8 -10 min)
Move the Pieces to a blender, add 1 cup of the cooking liquid, garlic, milk and spices to taste and blend away… add more liquid to make it how you like it , feel free to add a little olive oil to smooth it out more
Garnish with parmesan and chives
Use your mini- muffin tin for cute little tots
3 cups cauliflower rice
1 cup shredded sharp cheddar cheese
¼ cup almond flour
1 teaspoon kosher salt
A few grinds black pepper
¼ teaspoon ground mustard
Preheat your oven to 400°F. Spray a mini muffin tin with oil.
Squeeze out the excess moisture from the shredded cauliflower.
Combine all of the ingredients in a large bowl, and mix together thoroughly
Using a spoon or scoop, divide the mixture between the muffin cups and press down firmly into the cups.
Bake at 400°F for 20-25 minutes, or until golden brown.
Allow to cool slightly before running a knife around the edge to pop the tots out of the muffin tin.
Cut the head into steaks… Pre heat your oven to 450 degrees and coat them in oil… season as you wish and cook for 20 min then flip and cook for another 10-15 min… They will be tender and browned
Roasted Cauliflower Head
Pre heat the oven to 425 degrees. Rub the entire head with oil and apply the spices you like to it… Indian spices go really well with this like Garam masala, cumin, mustard powder, turmeric. Cook this for about 75 minutes, rotating the pan half way… Allow this to cool and then serve with your favorite dip
